LINDSEY'S AIR FRYER MEATBALLS

Lindsey Greene is an influencer we hooked up with in May 2020. We didn’t know what an influencer was before we started in the meatball biz, but quickly found out they are good people to know! They INFLUENCE people to buy a product or shop at a store or eat at a restaurant, yep that easy. Of course they have to love it to share it, just saying. Lindsey’s quick dinner she pulled together with the Grandpa’s Meatballs as the star component!

Ingredients:

« A little EVOO

« Half a small onion

« 2 cloves garlic

« Red pepper flake

« 1 can whole peeled sanmarzano tomatoes (blitzed w/ hand blender, or hand crushed)

« 1 tsp salt (or to taste)

Served with:

« 1-2 pats butter

« Approx. 1/2 cup freshly grated parmigaiano regiiano cheese (or to taste)

This is my absolute favorite quick tomato sauce.

1. Start with a little EVOO, then add some grated onion (about half of a small onion) and minced garlic (I used 2 cloves, go for it if you want it).

2. Stir constantly over medium low heat to toast the garlic. Now would be the time to add red pepper flake if you’d like some heat-Shane’s a wimp so I left it out this time.

3. Next, add a can of whole peeled #sanmarzano tomatoes ( I blitzed mine with a hand blender, but you can hand crush yours if you’d like) and salt (approx 1 tsp or to taste) and bring to a simmer.

4. When your’e ready to serve, add a pat or two of butter (I use @kerrygoldusa) + approx ½ C freshly grated Parmigaiano Reggiano cheese (or to taste) and mix! 

The meatballs were so fun too! (about 1 oz meatballs) Super easy-recipe on the @3lonettisisters packet. I put mine in the air fryer for 3 minutes (could’ve maybe gone a few seconds less but not too much) and they came out brown on all sides and slightly crispy! 100% the way to cook meatballs. Lots of flavor in the @3lonettisisters organic mix too-will def use again!
