Meatloaf!

Meatloaf meets Grandpa’s Meatball Mix-Easy Peasy 

Ingredients: 

One Batch Bag of Grandpa’s Meatball Mix (3/4 cup)

2 pounds 85% lean ground beef or a mixture of meats-pork/beef, turkey/beef (too much? Eat one, freeze one!) 

1 egg, beaten 

1 ¼ cup Parmesan cheese

¼ cup finely chopped green pepper (ok to skip if you don’t like) 

¾ cup whole or evaporated milk (you could add the left over to mashed potatoes)

½ teaspoon salt, or to taste

½ cup ketchup or marinara sauce 

Combine all ingredients except ketchup or marinara; press into a 9x5x3 inch loaf pan. Turn out onto a shallow baking pan, I like to use a baking rack so the fat doesn’t pool. Bake at 350 degrees for 1 hour. Spread ketchup or marinara on top and return to the oven. Bake 15-20 minutes longer, or until thoroughly cooked. 

Serves 8

Still goes well with classic mashed potatoes or oven fried potatoes (or try pasta!), green salad or green beans. I like to add fruit slices with a heavy meal like this. Try grapes, apples, melons…
